I have found that cheesecakes in my Instant Pot come out consistently better than any other method. If you don’t have one or prefer not to use it, this cake can be made in the oven as well.
Crust:
1 cup almond flour
½ tsp cinnamon
4 tbsp of allulose
1 tbsp cocoa powder
3 tbsp butter, melted

Filling:
24 oz cream cheese, softened
3 large eggs, at room temperature
1/3 cup sour cream, at room temperature
4 oz of unsweetened chocolate, melted and cooled
1 tbsp instant espresso powder, dissolved in 1 tbsp of hot tap water
1 ¼ cups of allulose
½ tsp kosher salt
1 tsp vanilla extract

Ganache:
½ oz of unstweetened chocolate
2 tbsp powdered allulose
2 tbsp heavy cream
Directions:
For the crust: In a bowl, combine the almond flour, allulose, cocoa powder, and cinnamon. Mix in the melted butter, and press into a 7” push-bottom or springform pan, coming up the sides a bit.
For the filling: In a mixer or large blender (only use a blender if yours is pretty powerful), combine the softened cream cheese, sour cream, vanilla, sweetener, salt, espresso, and chocolate. Scrape down the sides a few time to ensure a homogeneous mixture. Then add the eggs and mix until combined. Pour into the prepared pan, using an offset spatula to smooth the top. Cover tightly with aluminum foil.
Place 1 cup of water in the instant pot. Place your push-bottom pan on the trivet and lower them in. Close the lid and set manually to 30 minutes. After the 30 minutes are up, let it NP release for 15 minutes.
Remove from the instant pot, remove the foil, and gently blot with a paper towel any water that may have accumulated on the top of the cake. Cover and refrigerate for several hours or overnight.
Once the cake has cooled, run a thin, sharp knife around the edge, and push the bottom up to release. Melt together the ganache ingredients. You may need to add more or less cream to achieve a drizzle-able consistency. Drizzle over the cheesecake, and enjoy!
