Ingredients

• 2 cups (250g) all-purpose flour

• ½ cup (100g) granulated sugar

• ¼ cup (50g) brown sugar

• 1 tbsp baking powder

• ¼ tsp salt

• ½ cup (120ml) vegetable oil or melted butter

• ¾ cup (180ml) milk

• 2 large eggs

• 1 tsp vanilla extract

• 1 cup (170g) chocolate chips (plus extra for topping)

Instructions

Preheat oven to 180°C (350°F) and line a muffin pan with paper liners. In a large bowl, whisk together flour, baking powder, salt, granulated sugar, and brown sugar. In another bowl, mix oil, milk, eggs, and vanilla extract until smooth. Pour wet ingredients into the dry ingredients and mix gently until just combined — do not overmix. Fold in chocolate chips.

Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle a few extra chocolate chips on top. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean (a few melted chocolate streaks are fine). Cool slightly before serving warm or at room temperature.
