Ingredients
- 300 g chicken breast, bite-sized
- 2 cups broccoli florets
- 1 large carrot, sliced
- 1 green bell pepper, sliced
- 2 tbsp cooking oil
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- ½ tsp black pepper
- ½ tsp grated ginger
- 2 tbsp water
Method
- Heat 1 tbsp oil in a large pan. Add chicken, pepper, and cook 5–7 min until browned and cooked through. Remove.
- Add remaining oil, then garlic and ginger. Stir for 30 seconds.
- Add broccoli, carrot, and bell pepper. Stir-fry 4–5 minutes until crisp-tender.
- Return chicken to the pan.
- Add soy sauce, oyster sauce, black pepper, and water. Toss everything together for 2–3 minutes.
- Serve hot, optionally with rice or noodles.
Tip: For a lighter/lower-carb version, skip the rice and use extra broccoli or other vegetables.
