Ingredients

  • 2 large chicken breasts (cut into halves or cubes)
  • 2 cups fresh spinach (or 1 cup frozen, drained)
  • 1½ cups mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 1 cup heavy cream (or half & half)
  • ½ cup cream cheese (softened)
  • ¾ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp olive oil or butter
  • Salt and black pepper (to taste)
  • ½ tsp paprika
  • ½ tsp dried oregano or thyme

  1. Preheat oven to 180°C (350°F). Grease a baking dish.
  2. Heat olive oil in a pan, sauté onions and garlic until fragrant.
  3. Add mushrooms and cook until soft and slightly golden.
  4. Stir in spinach and cook until wilted (or heated through if frozen).
  5. Lower heat, add cream and cream cheese. Stir until smooth and creamy.
  6. Season with salt, pepper, paprika, and herbs.
  7. Place chicken in the baking dish and pour the creamy spinach-mushroom mixture over it.
  8. Sprinkle mozzarella and Parmesan cheese on top.
  9. Bake for 25–30 minutes, or until chicken is fully cooked and the top is golden.
  10. Let rest for 5 minutes before serving.
