- 2 large chicken breasts (cut into halves or cubes)
- 2 cups fresh spinach (or 1 cup frozen, drained)
- 1½ cups mushrooms (sliced)
- 2 cloves garlic (minced)
- 1 small onion (finely chopped)
- 1 cup heavy cream (or half & half)
- ½ cup cream cheese (softened)
- ¾ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tbsp olive oil or butter
- Salt and black pepper (to taste)
- ½ tsp paprika
- ½ tsp dried oregano or thyme
- Preheat oven to 180°C (350°F). Grease a baking dish.
- Heat olive oil in a pan, sauté onions and garlic until fragrant.
- Add mushrooms and cook until soft and slightly golden.
- Stir in spinach and cook until wilted (or heated through if frozen).
- Lower heat, add cream and cream cheese. Stir until smooth and creamy.
- Season with salt, pepper, paprika, and herbs.
- Place chicken in the baking dish and pour the creamy spinach-mushroom mixture over it.
- Sprinkle mozzarella and Parmesan cheese on top.
- Bake for 25–30 minutes, or until chicken is fully cooked and the top is golden.
- Let rest for 5 minutes before serving.
