Ingredients

For the dough:

  • 3 cups all-purpose flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 cup warm water (approximately)

For the filling:

  • 1 lb (450 g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • ½ cup chopped fresh parsley
  • 1 tsp paprika
  • ½ tsp black pepper
  • Salt to taste
  • 1 tbsp cooking oil

For topping:

  • 1 egg, beaten
  • ½ cup shredded cheese
  • Chopped parsley

Instructions

  1. Make the dough: Mix flour, yeast, sugar, and salt. Add olive oil and warm water gradually. Knead for 8–10 minutes until smooth. Cover and let rise for about 1 hour.
  2. Cook the filling: Heat oil in a pan. Sauté onion and garlic, add ground beef, paprika, salt, and pepper. Cook until the beef is fully browned and reaches 160°F (71°C). Let it cool.
  3. Add cheese: Mix the cooled beef with parsley and mozzarella.
  4. Shape the roll: Roll the dough into a large rectangle. Spread the filling evenly, leaving a small border around the edges. Roll tightly and seal the seam.
  5. Add topping: Place seam-side down on a lined baking tray. Brush with beaten egg and sprinkle extra cheese on top.
  6. Bake: Bake at 375°F (190°C) for 25–30 minutes, until golden brown and cooked through.
  7. Serve: Rest for 5–10 minutes, slice into thick pieces, and garnish with fresh parsley.
