Here’s what you needโ€ฆ

-1 pound of smoked sausage
-1 tablespoon avocado oil
-1/2 cup chopped onion
-1 clove garlic, minced (I added a little extra cus I love garlic)
-4 cups chicken or vegetable broth
-1 medium head of cabbage, chopped
-10 ounces diced tomatoes with green chilies (I didn’t have this, so I used 10 ounces of diced tomatoes and added a jalapeno, diced)
-4 ounces cream cheese
-2 cups shredded cheddar cheese
-salt, pepper, garlic powder, and onion powder to taste.

Here’s how to make itโ€ฆ

1) slice the sausage into bite sized pieces

2) heat the oil in a Dutch oven or stock pot over medium heat.

3) add the sausage and onions to the pot and cook until they start to brown, about 5 minutes stiring occasionally

4) stir in garlic and cook for 30 second more

5) add the chicken stock, cabbage, tomatoes and chilies, and seasonings

6) bring to a boil, reduce to a simmer, and cook until the cabbage is tender, about 10 to 15 mins.

7) melt the cream cheese in the microwave until soft and easy to stir. Stir the cream cheese and cheddar into the soup, and continue stiring on low heat until the cheeses have melted and the soup is creamy.

Enjoy.
Searving size is about 1 cup, and this makes roughly 8 servings.
