Instructions:

  3. Lay the chicken breasts flat on a cutting board. Using a sharp knife, make a horizontal cut through the thickest part of each chicken breast, creating a pocket for the stuffing. Be careful not to cut all the way through.
  4. Stuff each chicken breast with the broccoli and cheese mixture, dividing it evenly among the four breasts.
  5. Season the outside of each chicken breast with additional salt and pepper, if desired.
  6. Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 2-3 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove the skillet from the oven and let the chicken rest for a few minutes before serving.
  9. Optional: Garnish with chopped fresh parsley before serving.
