- 8 large eggs, beaten
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled breakfast sausage or bacon
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup chopped fresh cilantro (optional)
- Salt and pepper to taste
- Cooking spray or butter for the pan
- Instructions:
- In a large skillet over medium heat, cook the breakfast sausage or bacon until fully cooked. Remove from the pan and set aside.
- In the same skillet, add a bit of cooking spray or butter. Saute the diced bell peppers and onions until they are softened.
- Pour the beaten eggs into the skillet with the bell peppers and onions. Season with salt and pepper. Cook, stirring occasionally, until the eggs are scrambled and fully cooked.
- Place a tortilla in a separate skillet over medium heat. Sprinkle a portion of shredded cheddar cheese on one half of the tortilla.
- Add a portion of the cooked eggs, followed by a portion of the cooked sausage or bacon. Sprinkle with chopped cilantro if desired.
- Fold the tortilla in half, creating a half-moon shape. Press down gently with a spatula and cook until the cheese is melted and the tortilla is golden brown. Flip and cook the other side until it’s also golden brown.
- Repeat the process for the remaining tortillas and filling.
- Once all quesadillas are cooked, slice them into wedges and serve hot.
