- Ingredients
- 500 g button or brown mushrooms
- 3 tbsp butter
- 1 tbsp olive oil
- 5–6 garlic cloves, finely chopped
- 1 tbsp soy sauce
- ½ tsp black pepper
- ½ tsp paprika (optional)
- ½ tsp dried thyme (optional)
- Salt to taste
- 1 tsp lemon juice
- 2 tbsp chopped fresh parsley
- Clean mushrooms: Wipe clean and dry thoroughly. Leave small mushrooms whole and halve larger ones.
- Brown them: Heat olive oil and 1 tbsp butter in a large pan. Add mushrooms in a single layer and cook for 5–7 minutes until golden brown.
- Add garlic: Reduce heat and add the remaining butter, chopped garlic, black pepper, paprika and thyme. Cook for 1–2 minutes.
- Add sauce: Stir in soy sauce and cook for another 1–2 minutes until the mushrooms are glossy and coated.
- Finish: Add lemon juice and parsley. Taste and adjust salt.
- Serve: Serve hot as a side dish with steak, chicken, rice or toasted bread.
- Don’t overcrowd the pan, or they will steam instead of brown.
- Avoid adding salt too early, as it can draw out moisture.
- For extra sauce, add 2 tbsp chicken stock or water and simmer for 1–2 minutes.
