1. Ingredients
    • ½ cup cottage cheese
    • 3 large eggs, separated
    • ¼ tsp cream of tartar
    • 1 tbsp honey or sugar
    • ½ tsp vanilla
    • Pinch of salt
    Method
    1. Heat oven to 160°C (320°F). Line a baking tray with parchment.
    2. Blend cottage cheese, egg yolks, honey, vanilla, and salt until smooth.
    3. Beat egg whites with cream of tartar until stiff, glossy peaks form.
    4. Gently fold the cottage-cheese mixture into the egg whites without deflating them.
    5. Spoon into a round mound on the tray and smooth the top.
    6. Bake 30–35 minutes, until golden brown and set.
    7. Turn off the oven, leave the bread inside 10 minutes, then cool before slicing.
    Tip: Don’t overmix after adding the egg whites—that’s what keeps it fluffy and cloud-like.
