Ingredients

  • 4 slices thick sourdough or brioche bread
  • 150 g Brie cheese, sliced
  • 1 cup fresh blackberries
  • 1 tbsp maple syrup or honey
  • 1 tsp lemon juice
  • 2 tbsp butter, softened
  • 1 tbsp brown sugar
  • ¼ tsp cinnamon
  • Pinch of salt

Instructions

  1. Make the blackberry filling: Add blackberries, maple syrup, lemon juice, brown sugar, cinnamon, and salt to a small pan.
  2. Cook over medium heat for 5–7 minutes, gently crushing some berries, until thick and jammy.
  3. Assemble: Butter the outside of each bread slice. Place Brie on the unbuttered side of two slices and spoon the warm blackberry mixture over the cheese. Top with remaining bread slices.
  4. Grill: Heat a skillet over medium-low heat. Cook sandwiches for 3–4 minutes per side, pressing gently, until golden brown and the Brie is melted.
  5. Let rest for 1–2 minutes, then slice and serve while warm.
