Ingredients You Will Need

Here are the basic ingredients for making about 6 medium crepes:

4 large eggs
1 cup heavy cream
2 tablespoons melted butter
1 cup finely shredded mozzarella cheese
A pinch of salt
Extra butter for cooking

Optional filling ideas:

1 cup cooked ground beef
1 cup cooked shredded chicken
4 slices cooked bacon, chopped
1 cup sliced cooked steak

Step by Step Method

First, take a large mixing bowl and crack the 4 eggs into it. Make sure no shell pieces fall inside. Use a whisk or fork to beat the eggs well. Mix until the yolks and whites are fully combined and the color becomes smooth and light yellow.

Next, pour 1 cup of heavy cream into the bowl with the eggs. Add the 2 tablespoons of melted butter and a pinch of salt. Whisk everything together slowly. Keep mixing until the batter looks smooth and slightly thick. There should be no big lumps.

Now add 1 cup of finely shredded mozzarella cheese to the mixture. Stir gently so the cheese spreads evenly in the batter. The cheese will help the crepes hold together and give them a soft texture.

Place a non stick pan on the stove over medium heat. Let the pan warm up for a few minutes. Add a small amount of butter to the pan and let it melt fully. Spread the butter around so the surface is covered.

Pour a small amount of batter into the center of the pan. Quickly lift the pan and tilt it in a circular motion so the batter spreads into a thin round shape. Try to make the layer thin so the crepe cooks evenly.

Cook the crepe for about 1 to 2 minutes. You will see the edges start to lift slightly from the pan. The bottom should become light golden in color. Carefully slide a spatula under the crepe and flip it gently.

Cook the other side for another 1 minute until it is fully set. Do not overcook, because the crepe can become too dry. Once done, place the crepe on a plate.

Repeat the same process with the rest of the batter. Add more butter to the pan if needed before each crepe. Stack the cooked crepes on top of each other on a plate.

If you want to add filling, place one crepe flat on a plate. Add some cooked ground beef, chicken, bacon, or steak in the center. Sprinkle extra cheese on top if you like. Fold the crepe over the filling or roll it gently. Serve warm and enjoy.
