Ingredients
Dry Ingredients:
- 2 cups all-purpose flour
- 1½ teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
Wet Ingredients:
- 1 cup white sugar
- ½ cup brown sugar (optional)
- 1 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
Main Add-ins:
- 2 cups finely grated carrots
- ½ cup chopped walnuts (optional)
- ½ cup raisins (optional)
🍰 Instructions
1. Prepare the Oven
- Preheat your oven to 180°C (350°F)
- Grease a cake pan and lightly dust it with flour
2. Mix Dry Ingredients
- In a bowl, combine:
- Flour
- Baking powder
- Baking soda
- Cinnamon
- Salt
- Mix well and set aside
3. Mix Wet Ingredients
- In another bowl:
- Add white sugar, brown sugar, and oil
- Mix well until smooth
- Add eggs one by one and whisk properly
- Add vanilla extract and mix
4. Combine Mixtures
- Gradually add the dry ingredients into the wet mixture
- Mix gently until smooth (do not overmix)
5. Add Carrots
- Fold in grated carrots
- Add walnuts and raisins if you like
- Mix lightly
6. Bake
- Pour the batter into the prepared pan
- Bake for 35–45 minutes
- Check with a toothpick — if it comes out clean, the cake is done
7. Cool
- Let the cake cool for 10–15 minutes
- Remove from pan and cool completely
🧁 Optional Cream Cheese Frosting
Ingredients:
- 200g cream cheese
- ½ cup butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Method:
- Beat everything together until smooth and creamy
- Spread over the cooled cake

- Use finely grated carrots for a soft texture
- Do not overbake, or the cake will become dry
- Oil makes the cake more moist than butter
