Ingredients
Dough:
- 2 cups all-purpose flour (or half flour + half whole wheat)
- 1 tsp salt
- 1 tbsp oil or melted butter
- ~¾ cup warm water (as needed)
Filling:
- 1–1½ cups grated cheese (mozzarella or a mix with cheddar)
- 2 tbsp soft butter (optional, for layering)
- Pinch of salt (if cheese isn’t salty)
- Optional: chopped herbs (parsley, cilantro) or garlic
For cooking:
- Butter or oil for frying
Instructions
1. Make the dough
- Mix flour + salt + oil.
- Gradually add warm water and knead into a soft, smooth dough (about 8–10 mins).
- Cover and let it rest for 20–30 minutes.
2. Divide & shape
- Divide dough into equal balls (about golf-ball size).
- Roll each into a thin circle.
3. Add filling & layer
- Sprinkle cheese over the surface.
- Add tiny dots of butter (optional for flakiness).
- Fold like an envelope or roll into a log, then coil into a spiral (this creates layers).
- Flatten gently and roll again into a round flatbread.
4. Cook
- Heat a pan (medium heat).
- Place the flatbread on it.
- Cook until bubbles form, then flip.
- Brush with butter/oil and cook both sides until golden with brown spots.
5. Serve
- Serve hot—these are best fresh!
- Optional dip: yogurt, garlic butter, or honey.
Tips for Perfect Results
- Don’t overfill or it may tear.
- Resting the dough is key for softness.
- Medium heat prevents burning before cheese melts.
- Add a bit of sugar to dough if you want a slightly sweet version.
