Instructions:
- Prepare the Crust:
- In a food processor, combine almond flour, coconut flour, salt, and xanthan gum. Pulse to mix.
- Add cold butter cubes and pulse until the mixture resembles coarse crumbs.
- Add the egg and apple cider vinegar, processing until the dough comes together.
- Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the Filling:
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened.
- Add minced garlic and cook for another minute.
- Add ground beef (or pork) and cook until browned. Drain excess fat if necessary.
- Stir in the beef or chicken broth, diced tomatoes (if using), cumin, paprika, oregano, salt, and pepper. Simmer for 10-15 minutes, until the liquid has reduced and the mixture is thick.
- Assemble the Meat Pies:
- Preheat your oven to 350°F (175°C).
- Divide the dough into equal portions. Roll out each portion between two sheets of parchment paper to about 1/8 inch thickness.
- Cut out circles using a round cutter (about 4-5 inches in diameter). Re-roll the dough as needed.
- Place a spoonful of the meat filling in the center of each dough circle.
- Fold the dough over the filling to create a half-moon shape. Press the edges with a fork to seal.
- Place the pies on a baking sheet lined with parchment paper.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.
- Remove from the oven and let cool slightly before serving.
