Instructions:

  1. Prepare the Crust:
    1. In a food processor, combine almond flour, coconut flour, salt, and xanthan gum. Pulse to mix.
    2. Add cold butter cubes and pulse until the mixture resembles coarse crumbs.
    3. Add the egg and apple cider vinegar, processing until the dough comes together.
    4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling:
    1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened.
    2. Add minced garlic and cook for another minute.
    3. Add ground beef (or pork) and cook until browned. Drain excess fat if necessary.
    4. Stir in the beef or chicken broth, diced tomatoes (if using), cumin, paprika, oregano, salt, and pepper. Simmer for 10-15 minutes, until the liquid has reduced and the mixture is thick.
  3. Assemble the Meat Pies:
    1. Preheat your oven to 350°F (175°C).
    2. Divide the dough into equal portions. Roll out each portion between two sheets of parchment paper to about 1/8 inch thickness.
    3. Cut out circles using a round cutter (about 4-5 inches in diameter). Re-roll the dough as needed.
    4. Place a spoonful of the meat filling in the center of each dough circle.
    5. Fold the dough over the filling to create a half-moon shape. Press the edges with a fork to seal.
    6. Place the pies on a baking sheet lined with parchment paper.
  4. Bake:
    1. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.
    2. Remove from the oven and let cool slightly before serving.
