Ingredients
- 1 cup Greek yogurt
- 1 cup almond flour
- 2 large eggs
- 1 tsp baking powder (recommended for a lighter loaf)
- Pinch of salt (optional)
Instructions
- Preheat: Heat oven to 180°C (350°F). Line a small loaf pan with baking paper.
- Mix: Whisk eggs and Greek yogurt until smooth. Stir in almond flour, baking powder, and salt.
- Pour: Transfer batter to the loaf pan and smooth the top.
- Bake: Bake for 30–40 minutes, until golden and a toothpick inserted in the center comes out clean.
- Cool: Let rest for 15–20 minutes before slicing.
Tips
- Use thick, unsweetened Greek yogurt.
- The loaf will be moist and denser than traditional wheat bread.
- Note: This is low-carb, not zero-carb. Almond flour and yogurt contain some carbohydrates, and this recipe will not produce exactly the fluffy, stretchy crumb shown in the picture.
