Ingredients:

  • 2 turkey breasts, skin on, bone-in
  • 2 heads of garlic, roughly peeled and sliced horizontally
  • 2 medium onions, quartered
  • Fresh rosemary sprigs + for garnish
  • 1 pomegranate, quartered, for garnish (optional)

For the Garlic Herb Butter:

  • 2 sticks (1 cup) unsalted butter, softened
  • Salt and fresh cracked pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 teaspoons onion powder
  • 1 teaspoon crushed red chili pepper flakes

Instructions:

  1. Preheat the Oven: Remove all oven racks except for one and position it in the next-to-the-lowest position. Preheat your oven to 450ºF (230ºC).
  2. Prepare the Garlic Herb Butter:
    • In a medium bowl, combine the softened butter, salt, fresh cracked pepper, olive oil, garlic powder, chopped rosemary, chopped oregano, chopped parsley, onion powder, and crushed red chili pepper flakes. Mix until all ingredients are well incorporated.
  3. Prepare the Turkey Breast:
    • Gently loosen the skin covering each turkey breast by carefully running your fingers between the skin and the turkey meat, being cautious not to tear the skin.
    • Spread a generous amount of the prepared garlic herb butter under the skin, gently pressing on the skin to evenly distribute the herb butter. Repeat on the other side of the turkey breast.
    • Spread the remaining herb butter over and beneath the turkey breast, ensuring it is well coated with the flavorful mixture.
  4. Prepare the Roasting Pan:
    • Place the turkey breast, breast side up, inside a large roasting pan.
    • Surround the turkey with the quartered onions, sliced garlic, and fresh rosemary sprigs. Season these garnishes with salt and pepper.
  5. Roasting:
    • Place the prepared turkey breast in the preheated oven, breast side up.
    • Roast the turkey until it becomes nicely browned, which should take about 20-30 minutes.
    • After this initial roasting period, cover the turkey breast with a piece of foil to prevent over-browning.
  6. Continue Roasting:
    • Reduce the oven temperature to 350ºF (175ºC) and continue roasting the turkey breast for an additional 45-60 minutes, or until the internal temperature reaches 165ºF (74ºC) when measured with a meat thermometer.
  7. Rest and Garnish:
    • Remove the roasted turkey breast from the oven and let it rest for about 15 minutes before carving.
    • Garnish the turkey with fresh rosemary sprigs and optional pomegranate quarters.
  8. Carve and Serve:
    • Carve the turkey into slices and serve it with your favorite sides and the delicious garlic herb butter drippings from the roasting pan.
