Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Cauliflower:
- Place the cauliflower florets in a large bowl and toss with olive oil (or melted butter), garlic powder, onion powder, salt, and pepper.
- Spread the cauliflower evenly on a baking sheet lined with parchment paper.
- Roast the Cauliflower:
- Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and slightly golden around the edges.
- Mash the Cauliflower:
- Transfer the roasted cauliflower to a large mixing bowl.
- Use a potato masher or fork to mash the cauliflower until it reaches your desired consistency (you can leave it slightly chunky or make it smooth).
- Add the Toppings:
- Stir in the sour cream, shredded cheddar cheese, crumbled bacon, and green onions (if using). Mix until well combined.
- Bake Again:
- Transfer the mixture to a baking dish and sprinkle extra shredded cheddar cheese on top.
- Bake in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Remove from the oven and let it cool slightly.
- Garnish with additional bacon, green onions, or a dollop of sour cream if desired.
