Loaded Cauliflower

Ingredients:

  • 1 large head of cauliflower, cut into florets (about 4-5 cups)
  • 2 tablespoons olive oil or melted butter
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese (plus extra for topping)
  • 1/4 cup cooked and crumbled bacon (about 4-6 slices)
  • 2 green onions, thinly sliced (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional toppings: chopped chives, extra bacon, or a dollop of sour cream

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Cauliflower:
    • Place the cauliflower florets in a large bowl and toss with olive oil (or melted butter), garlic powder, onion powder, salt, and pepper.
    • Spread the cauliflower evenly on a baking sheet lined with parchment paper.
  3. Roast the Cauliflower:
    • Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and slightly golden around the edges.
  4. Mash the Cauliflower:
    • Transfer the roasted cauliflower to a large mixing bowl.
    • Use a potato masher or fork to mash the cauliflower until it reaches your desired consistency (you can leave it slightly chunky or make it smooth).
  5. Add the Toppings:
    • Stir in the sour cream, shredded cheddar cheese, crumbled bacon, and green onions (if using). Mix until well combined.
  6. Bake Again:
    • Transfer the mixture to a baking dish and sprinkle extra shredded cheddar cheese on top.
    • Bake in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve:
    • Remove from the oven and let it cool slightly.
    • Garnish with additional bacon, green onions, or a dollop of sour cream if desired.
    • Serve warm and enjoy!
