4 oz cream cheese, softened

1/2 cup unsalted butter, softened

1/2 cup granulated erythritol or sweetener of choice

1 large egg

1 teaspoon vanilla extract

2 cups almond flour

1/4 cup coconut flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup freeze-dried strawberries, crushed into small pieces

Instructions:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

In a large mixing bowl, beat together the softened cream cheese, butter, and sweetener until smooth and creamy.

Add the egg and vanilla extract to the cream cheese mixture, and beat until well combined.

In a separate bowl, whisk together the almond flour, coconut flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Gently fold in the crushed freeze-dried strawberries until evenly distributed throughout the dough.

Using a cookie scoop or spoon, scoop out dough and roll into balls. Place the balls onto the prepared baking sheet, leaving some space between each cookie.

Use a fork to gently flatten each cookie slightly.

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden brown.

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
