Keto Scalloped Potatoes
Ingredients:
- 4 medium-sized turnips, peeled and thinly sliced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon thyme, dried
- Salt and pepper to taste
- 2 tablespoons butter, unsalted
- Chopped fresh parsley for garnish (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Turnips:
- Peel the turnips and slice them thinly. You can use a mandoline for even slices.
- Make the Sauce:
- In a saucepan over medium heat, combine the heavy cream, shredded cheddar cheese, grated Parmesan cheese, minced garlic, thyme, salt, and pepper.
- Stir continuously until the cheeses are melted, and the mixture is smooth. Remove from heat.
- Layering:
- Grease a baking dish with butter.
- Arrange a layer of sliced turnips in the bottom of the dish.
- Pour a portion of the cheese sauce over the turnips.
- Repeat the layers until you run out of turnips and sauce, finishing with a layer of sauce on top.
- Bake:
- Dot the top with butter.
- Cover the baking dish with foil and bake in the preheated oven for 40-45 minutes or until the turnips are tender.
- Broil (Optional):
- If you like a golden-brown top, uncover the dish and broil for an additional 2-3 minutes until it’s bubbly and golden.
- Garnish:
- Garnish with chopped fresh parsley if desired.
- Serve:
- Allow it to cool for a few minutes before serving.
