Keto Scalloped Potatoes


  • 4 medium-sized turnips, peeled and thinly sliced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon thyme, dried
  • Salt and pepper to taste
  • 2 tablespoons butter, unsalted
  • Chopped fresh parsley for garnish (optional)


  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Turnips:
    • Peel the turnips and slice them thinly. You can use a mandoline for even slices.
  3. Make the Sauce:
    • In a saucepan over medium heat, combine the heavy cream, shredded cheddar cheese, grated Parmesan cheese, minced garlic, thyme, salt, and pepper.
    • Stir continuously until the cheeses are melted, and the mixture is smooth. Remove from heat.
  4. Layering:
    • Grease a baking dish with butter.
    • Arrange a layer of sliced turnips in the bottom of the dish.
    • Pour a portion of the cheese sauce over the turnips.
    • Repeat the layers until you run out of turnips and sauce, finishing with a layer of sauce on top.
  5. Bake:
    • Dot the top with butter.
    • Cover the baking dish with foil and bake in the preheated oven for 40-45 minutes or until the turnips are tender.
  6. Broil (Optional):
    • If you like a golden-brown top, uncover the dish and broil for an additional 2-3 minutes until it’s bubbly and golden.
  7. Garnish:
    • Garnish with chopped fresh parsley if desired.
  8. Serve:
    • Allow it to cool for a few minutes before serving.
