Your sweet need will be satisfied by these no-bake Keto peanut butter balls, a simple and quick delicious snack or dessert. They are created with peanut butter, chocolate chips, sugar-free sweeteners, and coconut flour, of course. You’ll need several of these!

Ingredients

  • 2 TB butter
  • ¾ cup Smucker’s Natural peanut butter crunchy – make sure to stir well since oil gets on top
  • ½ cup sweetener Besti Allulose with monkfruit powdered sweetener
  • 1 TB coconut flour
  • 1 tsp Lakanto sugar-free maple syrup
  • ¼ cup sugar-free Lilly’s milk choc chips optional
  • Optional Topping: 1/4 cup crushed peanuts

Instructions

  • Butter should be softened before being combined with peanut butter.
  • Except for the chocolate chips and broken peanuts, combine the remaining ingredients with the peanut mixture. Mix until mixed at a medium speed.
  • Add the optional sugar-free chocolate chips to the mixture and stir to blend if using them. Even while they are wonderful on their own without the chocolate chips, they do offer a lovely new texture.
  • Using a teaspoon or tiny cookie scoop, scoop out the batter and form into balls with your hands. I have the tiny pampered chef cookie scoop, which is the ideal size at around 1 tbsp.
  • Crushed peanuts should be added on top. To make them stick, you might need to push them into each ball.
  • Before eating, place in the freezer for at least 20 minutes to help them firm up.
  • For up to two weeks, keep in the refrigerator.

Notes

*You may use almond flour in place of the coconut flour in this recipe if you don’t like it or don’t have any on hand. A cup of almond flour should be used for every 1/4 cup of coconut flour in the right proportion. You should anticipate using roughly 1/4 cup of almond flour because this recipe only asks for 1 tbsp of coconut flour.
