Ingredients:
- 1 lb (450g) kielbasa sausage, sliced
- 4 cups cauliflower florets
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)

Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the sliced kielbasa sausage and cook until it’s browned and slightly crispy. Remove the sausage from the pot and set it aside.
- In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.
- Add the cauliflower florets to the pot and stir to combine with the onion and garlic.
- Pour in the chicken or vegetable broth and bring the mixture to a boil.
- Reduce the heat to a simmer and cover the pot. Allow the cauliflower to cook until it’s tender, about 15-20 minutes.
- Use an immersion blender or regular blender to puree the cauliflower mixture until smooth and creamy.
- Return the pureed mixture to the pot and stir in the heavy cream, dried thyme, smoked paprika, salt, and pepper.
- Add the cooked kielbasa sausage back to the pot and heat the soup until it’s warmed through.
- Taste and adjust the seasoning if needed.
- Ladle the Keto Kielbasa Soup with Cauliflower into bowls and garnish with freshly chopped parsley.
- Serve the soup hot and enjoy!
