INGREDIENTS:

1 1/2 cups shredded mozzarella cheese
2 oz cream cheese
1 cup almond flour
2 large eggs
1/2 cup grated Parmesan cheese
1/4 cup shredded cheddar cheese
1/4 cup of shredded mozzarella (additional)

INSTRUCTIONS

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between until both cheeses are melted and well combined.

Add almond flour and eggs to the melted cheese mixture. Mix until a dough forms.

Divide the dough into two portions. Roll each portion into a long rope shape on the prepared baking sheet.

Mix Parmesan and cheddar cheese in a bowl. Sprinkle this cheese mixture evenly over the two ropes, pressing it lightly into the surface.

Bake in the preheated oven for about 15-20 minutes or until the breadsticks are golden brown.

In the last few minutes of baking, sprinkle the additional shredded mozzarella on top and return to the oven until melted and bubbly.

Allow the breadsticks to cool slightly before slicing and serving.
