1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8×8-inch (20×20 cm) baking dish with parchment paper, leaving some overhang for easy removal.

2. Prepare the Crust: In a mixing bowl, combine almond flour, powdered erythritol, melted butter, and a pinch of salt. Mix until the ingredients come together.

3. Press the Crust: Press the crust mixture evenly into the bottom of the prepared baking dish. Use the back of a spoon or your hands to compact it.

4. Bake the Crust: Bake the crust in the preheated oven for about 10-12 minutes, or until it starts to turn golden. Remove from the oven and let it cool while you prepare the filling.

5. Make the Lemon Filling:

  • In another mixing bowl, whisk together the eggs and powdered erythritol until well combined.
  • Add the fresh lemon juice, lemon zest, heavy cream, coconut flour, baking powder, and a pinch of salt. Whisk until the mixture is smooth.

6. Pour the Filling Over the Crust: Pour the lemon filling over the cooled crust in the baking dish.

7. Bake the Lemon Squares: Bake in the oven for about 20-25 minutes, or until the edges are set, and the center is slightly jiggly.
