Keto Cream Puffs

Ingredients: For the Choux Pastry:

- 1/4 cup coconut flour

- 4 large eggs
For the Filling:
- 1 cup heavy cream
- 4 oz cream cheese, softened
- 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a saucepan, combine the water, butter, and salt. Bring to a simmer over medium heat.
- Once the butter has melted completely, add both almond flour and coconut flour to the saucepan. Stir continuously until the mixture forms a dough and pulls away from the sides of the pan. Remove from heat and let it cool slightly.
- Add eggs, one at a time, to the dough, mixing well after each addition until the dough is smooth and glossy.
- Transfer the dough into a piping bag fitted with a round tip. Pipe small mounds onto the prepared baking sheet, leaving space between each mound for expansion.
- Bake for 25-30 minutes or until the cream puffs are golden brown and puffed up. Remove from the oven and let them cool completely on a wire rack.
- Meanwhile, prepare the filling by whipping the heavy cream until stiff peaks form.
- In a separate bowl, beat the softened cream cheese, powdered erythritol, and vanilla extract until smooth and creamy.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Once the cream puffs have cooled, slice off the tops and fill each puff with the cream cheese filling.
- Replace the tops and dust with powdered erythritol, if desired. Serve and enjoy!
