Keto Cream Puffs

Ingredients: For the Choux Pastry:

  • 1 cup almond flour
  • 1/4 cup coconut flour

  • 1/4 teaspoon salt
  • 4 large eggs

For the Filling:

  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a saucepan, combine the water, butter, and salt. Bring to a simmer over medium heat.
  3. Once the butter has melted completely, add both almond flour and coconut flour to the saucepan. Stir continuously until the mixture forms a dough and pulls away from the sides of the pan. Remove from heat and let it cool slightly.
  4. Add eggs, one at a time, to the dough, mixing well after each addition until the dough is smooth and glossy.
  5. Transfer the dough into a piping bag fitted with a round tip. Pipe small mounds onto the prepared baking sheet, leaving space between each mound for expansion.
  6. Bake for 25-30 minutes or until the cream puffs are golden brown and puffed up. Remove from the oven and let them cool completely on a wire rack.
  7. Meanwhile, prepare the filling by whipping the heavy cream until stiff peaks form.
  8. In a separate bowl, beat the softened cream cheese, powdered erythritol, and vanilla extract until smooth and creamy.
  9. Gently fold the whipped cream into the cream cheese mixture until well combined.
  10. Once the cream puffs have cooled, slice off the tops and fill each puff with the cream cheese filling.
  11. Replace the tops and dust with powdered erythritol, if desired. Serve and enjoy!
