Keto Chocolate Mint Cream Cake
Ingredients:
For the Cake:
- 2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup coconut flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated erythritol or your preferred keto-friendly sweetener
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup unsweetened almond milk
For the Mint Cream Layer:
- 1 cup heavy cream
- 1/4 cup powdered erythritol
- 1 teaspoon mint extract
For the Chocolate Ganache:
- 1/2 cup dark chocolate (at least 85% cocoa), chopped
- 1/4 cup heavy cream
- 2 tablespoons unsalted butter
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and line a round cake pan with parchment paper.
2. Make the Cake Batter:
- In a large bowl, whisk together almond flour, cocoa powder, coconut flour, baking powder, baking soda, and salt.
- In another bowl, beat together melted butter, erythritol, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients, alternating with almond milk, and mix until well combined.
- Pour the batter into the prepared cake pan and smooth the top.
3. Bake the Cake:
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before removing it from the pan.
4. Make the Mint Cream Layer:
- In a chilled bowl, whip the heavy cream until soft peaks form.
- Add powdered erythritol and mint extract, and continue whipping until stiff peaks form.
- Spread the mint cream over the cooled cake.
5. Prepare the Chocolate Ganache:
- In a small saucepan, heat the heavy cream until it begins to simmer.
- Pour the hot cream over the chopped chocolate and butter. Let it sit for a minute, then stir until smooth.
- Allow the ganache to cool slightly before pouring it over the mint cream layer.
6. Chill and Serve:
- Place the cake in the refrigerator for a few hours to set the layers.
- Once set, slice and serve chilled.
