Keto Chocolate Mint Cream Cake

Ingredients:

For the Cake:

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated erythritol or your preferred keto-friendly sweetener
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened almond milk

For the Mint Cream Layer:

  • 1 cup heavy cream
  • 1/4 cup powdered erythritol
  • 1 teaspoon mint extract

For the Chocolate Ganache:

  • 1/2 cup dark chocolate (at least 85% cocoa), chopped
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and line a round cake pan with parchment paper.

2. Make the Cake Batter:

  • In a large bowl, whisk together almond flour, cocoa powder, coconut flour, baking powder, baking soda, and salt.
  • In another bowl, beat together melted butter, erythritol, eggs, and vanilla extract.
  • Add the wet ingredients to the dry ingredients, alternating with almond milk, and mix until well combined.
  • Pour the batter into the prepared cake pan and smooth the top.

3. Bake the Cake:

  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely before removing it from the pan.

4. Make the Mint Cream Layer:

  • In a chilled bowl, whip the heavy cream until soft peaks form.
  • Add powdered erythritol and mint extract, and continue whipping until stiff peaks form.
  • Spread the mint cream over the cooled cake.

5. Prepare the Chocolate Ganache:

  • In a small saucepan, heat the heavy cream until it begins to simmer.
  • Pour the hot cream over the chopped chocolate and butter. Let it sit for a minute, then stir until smooth.
  • Allow the ganache to cool slightly before pouring it over the mint cream layer.

6. Chill and Serve:

  • Place the cake in the refrigerator for a few hours to set the layers.
  • Once set, slice and serve chilled.
