- 1 small onion, diced
- 3 cloves garlic, minced
- 1 pound Italian sausage, casings removed
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper to taste
- Grated Parmesan cheese (optional, for serving)
- Instructions:
- Set your Instant Pot to the sauté function and heat the olive oil. Add the diced onion and minced garlic, and sauté until they become fragrant and slightly softened.
- Add the Italian sausage to the pot and cook, breaking it up with a spoon, until browned and cooked through.
- Pour in the chicken broth, heavy cream, diced tomatoes, chopped spinach, dried basil, dried oregano, and red pepper flakes. Give it a good stir to combine all the ingredients.
- Close the Instant Pot lid and set the valve to the sealing position. Cook on high pressure for 5 minutes.
- Once the cooking time is complete, do a quick release of the pressure by carefully turning the valve to the venting position. Be cautious of the hot steam.
