- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, cubed
- 1/3 cup olives (Kalamata or green), sliced
- 2 tablespoons fresh parsley, chopped

- 3 tablespoons olive oil
- 1 tablespoon lemon juice (fresh)
- 1 teaspoon red wine vinegar

- Prepare the vegetables
Wash and cut the cherry tomatoes, cucumber, and onion. Dice the avocados just before mixing so they stay fresh. - Combine salad ingredients
In a large bowl, add tomatoes, cucumber, onion, olives, and parsley. - Add avocado & feta
Gently fold in the diced avocado and feta cheese to avoid breaking them. - Make the dressing
In a small bowl, whisk together olive oil, lemon juice, vinegar, oregano, salt, and pepper. - Mix everything
Pour the dressing over the salad and gently toss until evenly coated. - Serve immediately
