  • 1 can (14 oz) diced tomatoes, drained
  • 1/2 cup low-carb marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the diced tomatoes, low-carb marinara sauce, dried oregano, dried basil, garlic powder, salt, and pepper. Mix well.
  3. Spread a thin layer of the tomato sauce mixture on the bottom of a baking dish.
  4. Add the pre-made meatballs on top of the sauce layer, arranging them evenly in the dish.
  5. Pour the remaining tomato sauce mixture over the meatballs, ensuring they are well coated.
  6. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top of the casserole.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for about 20-25 minutes.
  8. After the initial baking time, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted, bubbly, and lightly golden.
  9. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
  10. Garnish with fresh basil or parsley if desired.
