  • 1 cup Greek Yogurt
  • 1 tsp Paprika
  • 1 tbsp Parsley Finely chopped
  • 1 1/2 tbsp Dijon Mustard
  • 1 tsp Hot Sauce
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Cajun Seasoning

Instructions:

  • Preheat the air fryer to 350 degrees.
  • Beat the egg in a shallow bowl.
  • Mix together the pork rind crumbs, parmesan cheese, 1 ½ tsp. Cajun seasoning and salt and pepper to taste in a separate shallow bowl.
  • Dip the chicken tenderloins into the egg, and then coat in the pork rind crumb mixture.
  • Place on a rack in the air fryer for 10-12 minutes.
  • Raise the temperature to 400 degrees and cook for another 4-5 minutes until crispy and browned.
  • Mix together all of the ingredients for the dipping sauce in a bowl, and serve.
