Ingredients
For the Alfredo Sauce:
- 1/2 cup (1 stick) unsalted butter
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- Salt and pepper to taste
For the Lasagna:
- 9 lasagna noodles
- 3 cups cooked, shredded chicken breast
- 4 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups ricotta cheese
- 2 large eggs
- 2 cups fresh spinach (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Alfredo Sauce:
- In a medium saucepan, melt the butter over medium heat.
- Add the minced garlic and cook until fragrant (about 1 minute).
- Pour in the heavy cream and bring to a simmer.
- Gradually stir in the grated Parmesan cheese until melted and smooth.
- Season with salt and pepper to taste. Remove from heat and set aside.
- Cook the Lasagna Noodles:
- In a large pot of salted boiling water, cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
- Prepare the Ricotta Mixture:
- In a medium bowl, combine the ricotta cheese, eggs, and a pinch of salt and pepper. Mix until well combined.
- Assemble the Lasagna:
- Spread a thin layer of Alfredo sauce on the bottom of a 9×13-inch baking dish.
- Place 3 lasagna noodles on top of the sauce.
- Spread 1/3 of the ricotta mixture over the noodles.
- Sprinkle 1 cup of shredded chicken over the ricotta mixture.
- Spread 1/3 of the Alfredo sauce over the chicken.
- Sprinkle 1 cup of shredded mozzarella cheese on top.
- Repeat these layers two more times, ending with a final layer of Alfredo sauce and mozzarella cheese.
- If using, sprinkle fresh spinach between the layers of chicken and cheese.
- Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 20 minutes, or until the cheese is golden and bubbly.
- Garnish and Serve:
- Let the lasagna rest for 10-15 minutes before serving.
- Garnish with chopped fresh parsley and additional grated Parmesan cheese, if desired.
