The famous TikTok baked feta pasta gets a low-carb and gluten-free twist in this recipe using hearts of palm noodles. Loaded with cherry tomatoes, feta cheese, and an array of suggested extras, this dish is not only easy to make but also a delightful comfort food with infinite variations.
Ingredients:
Baked Feta Pasta Base
- 225 grams (~1 can/pack) hearts of palm pasta
- 200 grams (~1 cup) cherry or grape tomatoes
- 200 grams (7 oz) feta cheese
- 50 grams (~4 tablespoons) extra virgin olive oil
- One sprig fresh rosemary (or another herb you like)
Suggested Extras
- 200 grams (7 oz) turkey breakfast sausage, sliced
- 75 grams (~5 medium) white button mushrooms, quartered
- 60 grams (~1 small) yellow bell pepper, thinly sliced
Instructions:
- Preheat the oven to 200°C (392°F).
- In a baking/casserole dish, arrange the tomatoes, meat, and other vegetables, if using. Create a space in the middle for the feta cheese. If using crumbled cheese, place it pressed together in the center. Add the herbs on top of the cheese.
- Drizzle everything with olive oil.
- Bake in the preheated oven for about 40 minutes, until the vegetables are roasted, and the cheese is soft.
- Using a fork, smash the tomatoes and the cheese, mixing everything together. Be cautious with hot sauce splashes.
- Add the hearts of palm noodles, mix, and serve.
