It’s also really simple to make, and the leftovers are delicious after being baked and reheated.

When I bring people over for brunch, this delectable casserole has rapidly become one of my favorite breakfast dishes to prepare. Rich, flavorful, and quite simple to create. Another benefit is that I can prepare it ahead of time and reheat it.

This dish is stunning to look at, which is another bonus as many casseroles are edible but not particularly attractive. As it bakes, the cheese topping turns golden, and the spinach provides a really lovely color.

It’s acceptable to use whichever sausage you choose, enjoy, or have on hand, though. Italian sausage, for instance, is excellent in this casserole.

SERVING RECOMMENDATIONS

I frequently prepare this casserole for brunch and accompany it with keto scones, keto biscuits, and oven-baked bacon. We simply grab a piece and eat it with our morning coffee when we eat it on a weekday.

DIFFERENCES AND SUBSTITUTIONS

I usually always prepare this recipe exactly as instructed since I adore it. But here are some suggestions for you in case you want to change the fundamental recipe:

Any sausage that you like can be used. Of course, morning sausage will taste the way we usually think of breakfast meat.
Greek yoghurt made with full milk or softened cream cheese can be used in place of the heavy cream.
As long as the cheese has largely melted, use whatever you like. This casserole is fantastic with Gruyere, and I also enjoy Monterey Jack cheese.

Keto Breakfast Casserole

INGREDIENTS  

  • Eight big eggs
  • 1/4 cup of heavy cream
  • 1/4 teaspoon of black pepper
  • 1/2 teaspoon of Diamond Crystal kosher salt
  • 1/2 tsp. of garlic powder
  • 1/4 tsp. red pepper flakes
  • 1 cup of split shredded cheddar cheese (4 oz)
  • 1 lb Pork breakfast sausage,
  • Two cups of young spinach leaves (2 oz)

INSTRUCTIONS 

  • Set the oven to 400 degrees Fahrenheit. Grease a square 9-inch pan sparingly.
  • Mix the eggs, heavy cream, salt, pepper, garlic powder, and red pepper flakes in a big basin. Mix in 1/2 cup of the crumbled cheddar using a rubber spatula. Place aside.
  • A big 12-inch nonstick skillet should be heated to medium-high. Oil doesn’t need to be added. When the sausage is added, cook it for 5-7 minutes, breaking it up as you stir.
  • After turning off the heat, stir in the spinach leaves (you can leave them whole) and cook them briefly in the remaining heat of the pan.
  • Spread the sausage-spinach mixture evenly across the bottom of the baking dish after transferring it there.
  • Pour the eggs into the pan on top of the sausage mixture after giving them one more stir. If necessary, gently swirl the mixture in the pan to distribute the sausage and spinach more evenly.
  • Top with the final 1/2 cup of cheese.
  • Bake the dish until the cheese is melted and the eggs are done. This needs 25 minutes in my oven. The AMAZING scent that fills your kitchen will be your first indication that it is ready.
  • Before cutting the casserole into nine squares and serving, give it 10 minutes to rest.
