𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (𝗺𝗮𝗸𝗲𝘀 𝟭𝟮 𝗺𝘂𝗳𝗳𝗶𝗻𝘀 𝗼𝗿 𝟲 𝘀𝗲𝗿𝘃𝗶𝗻𝗴𝘀):
◾10 large eggs
◾60g pepperoni
◾100g pecorino cheese (grated)
◾100g cherry tomatoes
◾125g mozzarella (diced equally to 12 pieces)
◾1 tsp onion powder
◾1 tsp basil (dry)
◾1 tbsp extra virgin olive oil
◾0.5 tsp baking powder
◾2 tsp black pepper (ground)
◾Pinch of salt
◾Fresh basil (for garnish)

𝐌𝐞𝐭𝐡𝐨𝐝:
◾Preheat your oven to 200C (390F).
◾Add all ingredients (apart from the mozzarella, tomatoes and pepperoni) to a large mixing bowl and whisk together until well combined.
◾Pour mixture equally into a 12-cup muffin tray or cupcake tin.
◾Add equal amounts of cherry tomato into each cup (approx one tomato per cup).
◾Add a piece of mozzarella into each cup. Then top each with a slice of pepperoni (approx 5g of pepperoni).
◾Place the tray into the middle of the oven and cook for 25 minutes. Allow cooling for 10 minutes before serving. Enjoy. 😊
