Ingredients
For the Salad
- 4 cups seedless watermelon, cut into bite-sized cubes
- 2 large cucumbers, chopped
- ¾ cup crumbled feta cheese
- ¼ cup fresh mint leaves
- 2 tablespoons fresh parsley, chopped, optional
- ¼ small red onion, very thinly sliced, optional
- ½ teaspoon freshly ground black pepper
For the Dressing
- 2 tablespoons extra-virgin olive oil
- 1½ tablespoons fresh lime juice
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
1. Prepare the Watermelon
Cut the watermelon into bite-sized cubes. Remove any seeds and place the cubes in a large mixing bowl.
If the watermelon is especially juicy, allow the cubes to drain in a colander for a few minutes. This helps prevent the finished salad from becoming watery.
2. Prepare the Cucumber
Wash the cucumbers and cut them into thick slices or bite-sized chunks.
For extra crunch, use English or Persian cucumbers. You can leave the skin on for additional color and texture.
3. Add the Fresh Ingredients
Add the chopped cucumber to the watermelon.
Add the fresh mint leaves, chopped parsley if using, and thinly sliced red onion.
Gently toss the ingredients together.
4. Make the Dressing
In a small bowl, whisk together:
- Olive oil
- Lime juice
- Lemon juice
- Honey
- Salt
- Black pepper
Whisk until the dressing looks smooth and well combined.
5. Dress the Salad
Pour the dressing over the watermelon and cucumber mixture.
Using a large spoon or salad tongs, gently toss everything together.
Be careful not to stir too aggressively because the watermelon can break apart and release excess juice.
6. Add the Feta
Sprinkle the crumbled feta cheese over the salad.
Add a little freshly ground black pepper on top.
For the best appearance, reserve a small amount of feta and mint to sprinkle over the salad just before serving.
7. Chill
Place the salad in the refrigerator for approximately 15–20 minutes.
This allows the flavors to blend while keeping the watermelon and cucumber crisp.
8. Serve
Give the salad one gentle toss before serving.
Garnish with extra fresh mint, feta, and a small drizzle of olive oil.
Serve immediately while cold and refreshing.
Tips for the Best Watermelon Cucumber Salad
Choose a sweet watermelon: A ripe, sweet watermelon makes a huge difference because it balances the salty feta and tangy dressing.
Keep everything cold: Refrigerated watermelon and cucumber make this salad especially refreshing.
Don’t add the dressing too early: For the best texture, dress the salad shortly before serving.
Use good-quality feta: Creamy, crumbly feta adds the perfect salty contrast to the sweet watermelon.
Add lime: Fresh lime juice gives the salad a brighter flavor than bottled juice.
Don’t overmix: Gently fold the ingredients together to keep the watermelon cubes intact.

Make-Ahead Instructions
For the best texture, prepare the watermelon, cucumber, herbs, feta, and dressing separately.
Keep everything refrigerated and combine approximately 10–20 minutes before serving.
Once dressed, the salad is best enjoyed the same day because the watermelon and cucumber gradually release water.
Storage
Store leftovers in a covered container in the refrigerator and enjoy within 1 day for the best texture.
If the salad releases liquid, gently drain some of it before serving again.
