Ingredients:

  • For the cake:
    • 1 cup almond flour
    • 1/4 cup coconut flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 4 large eggs
    • 1/2 cup erythritol (or other keto sweetener)
    • 1 teaspoon vanilla extract
    • 1/4 cup unsweetened almond milk
  • For the coffee soak:
    • 1 cup brewed espresso (or strong coffee)
    • 1 tablespoon keto-friendly sweetener
    • 1 tablespoon rum or vanilla extract (optional)
  • For the mascarpone filling:
    • 1 1/2 cups mascarpone cheese
    • 3/4 cup heavy whipping cream
    • 1/3 cup powdered erythritol
    • 1 teaspoon vanilla extract
    • Cocoa powder for dusting

Instructions:

  1. Prepare the cake:
    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a bowl, whisk together the almond flour, coconut flour, baking powder, and salt.
    • In a separate bowl, beat the eggs and erythritol until light and fluffy. Add the vanilla extract and almond milk, and mix well.
    • Slowly fold the dry ingredients into the wet ingredients until combined.
    • Spread the batter onto the prepared baking sheet in an even layer and bake for 15-18 minutes, or until golden and firm. Let the cake cool, then cut it into strips to fit your serving dish.
  2. Make the coffee soak:
    • Brew a cup of espresso or strong coffee, and stir in the sweetener and rum or vanilla extract, if using. Allow it to cool.
  3. Prepare the mascarpone filling:
    • In a large mixing bowl, beat the mascarpone cheese, powdered erythritol, vanilla extract, and heavy whipping cream until smooth and creamy.
  4. Assemble the tiramisu:
    • Layer half of the cake strips at the bottom of your serving dish. Brush the cake generously with the coffee soak.
    • Spread half of the mascarpone filling over the soaked cake layer.
    • Repeat with another layer of cake strips, coffee soak, and mascarpone filling.
    • Dust the top with cocoa powder and refrigerate for at least 4 hours, or overnight for best results.
