  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the custard apple puree, plant-based milk, vegetable oil, vanilla extract, and apple cider vinegar.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are fine.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.

For the frosting:

  1. In a mixing bowl, beat the softened vegan butter until creamy and smooth.
  2. Gradually add the powdered sugar, custard apple puree, and vanilla extract. Beat until well combined and creamy.
  3. If the frosting is too thick, you can add a bit more custard apple puree or plant-based milk to reach your desired consistency.

Assembling the cake:

  1. Once the cake is completely cool, spread a layer of the custard apple frosting on top of the cake.
  2. If desired, place slices of custard apple on top of the frosting for decoration.
  3. You can also sprinkle chopped nuts over the frosting for added texture and flavor.
