Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegan butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- 1/2 cup chopped nuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a larger bowl, cream together the vegan butter, granulated sugar, and brown sugar until the mixture is smooth and creamy.
- Add the unsweetened applesauce and vanilla extract to the wet mixture. Mix well until everything is combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Gently fold in the blueberries and chopped nuts (if using) into the cookie dough.
- Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie.
- Bake in the preheated oven for about 12-15 minutes, or until the cookies are golden brown around the edges. The baking time may vary depending on your oven, so keep an eye on them.
- Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy your delicious vegan blueberry cookies with a glass of almond milk or your favorite beverage!
