2 lbs Jumbo Shrimp
2 celery stalks (thinly sliced)
1 Jalapeno (seeds removed, finely chopped)
1 Cucumber (chopped)
2 Avocados (peeled, seeded, chopped)
2 Handfuls of Fresh Coriander (chopped)
1/2 Small White or Yellow Onion (finely chopped)
2 lemons (juice and zest)
1 Orange (juice and zest)
11.5 ounces Canned Tomato Juice
1/2 Cup Tomato Sauce
2 cloves of garlic (grated)
Favorite Hot Sauce (to taste)
Salt/pepper (according to taste)

Instructions:
1. Boil water in a large pot. Add the prawns and boil until the prawns form a loose ‘C’ shape and are cooked through. The time will vary depending on the size of the shrimp. Drain and transfer to ice or run under cold water. Cut the shrimp into bite-sized pieces.
2. In large bowl, combine shrimp, celery, jalapeño, cucumber, avocado, cilantro, and onion.
3. In a separate bowl, combine lemon juice, orange juice, tomato juice, tomato sauce, garlic, hot sauce, salt and pepper. Pour into shrimp mixture and stir.
4. Cool for more than 1 hour and then serve.
