Ingredients
Base Dip:
- 1 lb ground beef
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 cup salsa (chunky preferred)
- 1½ cups shredded cheddar
- 1 cup Monterey Jack or mozzarella
- ½ cup diced tomatoes with green chilies (like Rotel)
Optional Add-ins:
- ½ cup black beans, drained
- ½ cup corn
- 2 tbsp diced pickled jalapeños
- 1/3 cup green onion, chopped
- 1 tsp chili powder (if you like it spicy)
Toppings: Green onions, olives, jalapeños, chopped cilantro
Instructions
Step 1: Brown the Beef
- In a skillet over medium heat, cook ground beef until no longer pink.
- Drain excess fat.
- Add taco seasoning + ¼ cup water. Simmer 3–5 minutes.
Want more flavor? Add a pinch of cumin or smoked paprika here.
Step 2: Build the Dip Base
- In a large mixing bowl, combine: - Softened cream cheese
- Sour cream
- Salsa
- Cooked beef
- Rotel
 
- Stir until creamy and fully combined.
- Fold in 1 cup cheddar + ½ cup mozzarella.
Step 3: Bake It Up
- Preheat oven to 375°F (190°C).
- Transfer beef-cheese mixture into a baking dish (8×8 or cast iron skillet).
- Smooth top. Sprinkle remaining cheese all over.
- Bake 20–25 minutes until bubbly and golden on top.
Want a broiled top? Broil for 1–2 minutes for a browned cheese crust.
Step 4: Top & Serve
