The recipe uses cauliflower rice instead of traditional sushi rice, maintaining the sushi flavors without the carbs. It’s an ideal dish for a light lunch or a refreshing appetizer!

Ingredients:

  • 1 small head of cauliflower, grated into rice-size pieces
  • 2 tbsp cream cheese, softened
  • 1 tbsp rice vinegar (optional)
  • 4 nori sheets
  • 1/2 cucumber, sliced into thin strips
  • 1/2 avocado, sliced thinly
  • 4 oz smoked salmon or fresh tuna slices
  • Soy sauce or coconut aminos for dipping
  • Sesame seeds for garnish
  • Wasabi and pickled ginger (optional, for serving)

Instructions:

  1. Prepare Cauliflower Rice: Grate the cauliflower into small, rice-sized pieces. You can use a food processor or box grater. In a microwave-safe bowl, microwave the cauliflower rice for 3–4 minutes until tender. Let it cool slightly.
