1/2 c. almond flour

4 oz. cream cheese, softened

4 large eggs

1 tsp. lemon zest

Butter, for frying and serving


  1. In a medium bowl, whisk together almond flour, cream cheese, eggs, and lemon zest until smooth.
  2. In a nonstick skillet over medium-low heat, melt 1 tablespoon butter. Pour in about 3 tablespoons batter and cook until golden, 2 minutes. Flip and cook 2 minutes more. Transfer to a plate and repeat with remaining batter.
  3. Serve topped with butter.

I’m not feeling the lemon. What else can I flavor these pancakes with?

If you’re not a fan of lemon, you could add a teaspoon of vanilla or maple extract instead. You could even make these savory by throwing in a bit of parmesan or cheddar cheese and a dash of dried herbs such as oregano. You could even get a little crazy and add in some chili flakes. 

Why are my pancakes grainy?

We love the nutty flavor and cakey texture that almond flour gives these pancakes, but we’re also aware that using a coarser almond meal can cause them to feel a little grainy. To avoid this, make sure to use almond flour (as opposed to almond meal), and look for the finest grind possible. You can even sift your almond flour, if there are some coarser bits that you’d like to remove.

What can I top these pancakes with?

Most typical pancake toppings aren’t allowed on the Keto diet, but that doesn’t mean you can’t take your pancakes to the next level. Try sprinkling on some toasted unsweetened coconut, drizzling them with melted unsweetened peanut butter, or topping with a handful of berries. You could also consider cooking your toppings into the pancakes: try sprinkling on some freshly made bacon crumbles or keto chocolate chips right before you flip them.
