Ingredients

  • 2 Tbs salted butter
  • 1/2 medium yellow onion, peeled and diced
  • 1 clove garlic, peeled and finely minced
  • 8 slices bacon, cooked and crumbled
  • 6 large eggs
  • 3/4 cup heavy whipping cream
  • 3/4 cup shredded Swiss cheese
  • 3/4 cup shredded Monterey Jack cheese

Instructions

  • Preheat the oven to 375°F
  • In a medium skillet over medium heat, melt butter, then add onion and sauté it until it begins to caramelize and becomes fragrant. (About 15 min).
  • Add garlic and sauté for 30 seconds. Transfer onion and garlic into a large mixing bowl. Replace the pan over the heat add bacon. Fry until crispy, about 10 to 12 minutes. Place bacon on paper towel to absorb the excess grease. Crack open eggs into a bowl with the onion and garlic, then pour in heavy whipping cream. Whisk together until fully combined. Crumbled bacon into the bowl, then add the cheeses in mix pour the mixture into around 9 inch pie dish or similarly sized pan. Bake for 20 minutes. When done, the egg mixture should be set, but not overly firm. Let cool for 15 minutes before slicing and serving.
