INGREDIENTS
Meatloaf
2 cups of chopped spinach and 1 pound of ground chicken
3/4 cup mozzarella cheese and 1 egg
Parmesan cheese, 1/2 cup
14 cup of sugar-reduced ketchup and 1/2 of a small onion sauce
1 teaspoon Sriracha
2 teaspoons of soy sauce
Sukrin Gold 2 tbsp, vinegar 1 tsp

INSTRUCTIONS
Set the oven to 350°F.
Mix onion, mozzarella, spinach, parmesan, egg, and ground chicken in a bowl(large).
Use a silicon muffin pan or nonstick spray to coat a large muffin pan.
The mixture should be placed halfway up each cup.
All sauce ingredients, combine in a bowl(medium).
The meatloaf cups should have some sauce left over for dishing.
Prepare cups for 45–50 minutes, or until thoroughly heated.
Serve hot, topped with the leftover sauce.
