Keto Cauliflower Fried Rice

Ingredients:

  • 1 medium head of cauliflower, riced
  • 2 tablespoons olive oil or avocado oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup mixed vegetables (such as bell peppers, peas, and carrots), diced
  • 2 eggs, beaten
  • 2 tablespoons soy sauce or tamari (for gluten-free option)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional: sliced green onions and sesame seeds for garnish

Instructions:

  1. Prepare the Cauliflower Rice: Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Alternatively, you can grate the cauliflower using a box grater.
  2. Cook the Eggs: Heat 1 tablespoon of oil in a large skillet over medium heat. Pour the beaten eggs into the skillet and scramble them until cooked through. Remove the scrambled eggs from the skillet and set aside.
  3. Stir-Fry Vegetables: In the same skillet, add the remaining oil. Sauté the minced garlic and diced onion until softened, about 2-3 minutes. Add in the mixed vegetables and cook until they are tender, about 5-6 minutes.
  4. Add Cauliflower Rice: Stir in the riced cauliflower and cook for an additional 4-5 minutes, stirring occasionally, until the cauliflower is tender.
  5. Combine Ingredients: Return the cooked eggs to the skillet with the cauliflower mixture. Drizzle with soy sauce and sesame oil. Stir well to combine all the ingredients evenly. Season with salt and pepper to taste.
  6. Garnish and Serve: Garnish with sliced green onions and sesame seeds if desired. Serve hot and enjoy!
