  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or your preferred keto-friendly sweetener
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1/2 cup fresh blueberries
  • 1 tsp vanilla extract


  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the dry mixture until it resembles coarse crumbs.
