Ingredients:
For the Crust:
- 1 1/2 cups almond flour
- 1/4 cup unsweetened shredded coconut (optional for extra texture)
- 1/4 cup melted butter (or coconut oil)
- 2 tbsp erythritol or another keto-friendly sweetener
- 1/4 tsp salt
For the Toffee Filling:
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1/4 cup erythritol or another keto-friendly sweetener
- 1/4 tsp vanilla extract
- 1/4 tsp salt
For the Topping:
- 2 large ripe bananas, sliced (optional, can be skipped to reduce carbs)
- 1 cup heavy whipping cream
- 2 tbsp powdered erythritol or another keto-friendly sweetener
- 1 tsp vanilla extract
Instructions:
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the almond flour, shredded coconut (if using), melted butter, sweetener, and salt.
- Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish.
- Bake for 10-12 minutes, or until golden brown. Let it cool completely before adding the filling.
2. Make the Toffee Filling:
- In a saucepan, melt the butter over medium heat.
- Stir in the erythritol and salt, then add the heavy cream.
- Bring the mixture to a simmer, stirring constantly, and cook for 5-7 minutes until it thickens. Be careful not to let it boil too vigorously.
- Remove from heat and stir in the vanilla extract.
- Allow the toffee mixture to cool slightly before pouring it over the cooled crust. Spread it evenly.
3. Assemble the Pie:
- If using bananas, arrange the banana slices over the toffee filling once it has set. You can skip this step if you prefer to keep it lower in carbs.
- In a mixing bowl, whip the heavy cream with the sweetener and vanilla extract until soft peaks form.
- Spread the whipped cream over the bananas or directly over the toffee if not using bananas.
- Optional: Garnish with a few shavings of dark chocolate or a sprinkle of cocoa powder.
4. Chill and Serve:
- Refrigerate the pie for at least 2 hours to let it set properly.
- Slice and serve chilled.
