Italian Chicken Wrap with Lemon Thyme Honey Mustard
Ingredients:
For the Chicken:
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
For the Wrap:
- 4 large whole wheat or spinach tortillas
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach leaves
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1 cup mozzarella cheese, shredded
For the Lemon Thyme Honey Mustard:
- 1/4 cup Dijon mustard
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh thyme leaves, chopped
- Salt and pepper to taste
Instructions:
For the Chicken:
- Preheat the oven to 375°F (190°C).
- Rub the chicken breasts with olive oil, Italian seasoning, salt, and pepper.
- Place the seasoned chicken on a baking sheet and bake for 20-25 minutes or until cooked through.
- Allow the chicken to rest for a few minutes, then slice it into thin strips.
For the Lemon Thyme Honey Mustard:
- In a small bowl, whisk together Dijon mustard, honey, lemon juice, chopped thyme, salt, and pepper until well combined. Set aside.
Assembling the Wrap:
- Lay out the tortillas and spread a generous spoonful of the Lemon Thyme Honey Mustard in the center of each.
- Place a handful of sliced chicken on top of the mustard.
- Add cherry tomatoes, fresh spinach, red onion, black olives, and shredded mozzarella on top of the chicken.
- Fold the sides of the tortilla inwards and then roll it up tightly, creating a wrap.
- Repeat for the remaining tortillas.
- Optionally, you can secure the wraps with toothpicks or wrap them in parchment paper for easy handling.
