DESCRIPTION: Delicious and easy-to-make supper loaded with veggies. Uses only one pot!

INGREDIENTS:

  • 1 lb. ground beef, grass-fed if possible
  • 1 16 oz. bag of coleslaw
  • 1 zucchini, chopped (small to medium size – around 2 cups)
  • 1/4 cup chopped onion
  • 1 24 oz. jar spaghetti sauce (gluten-free and sugar-free)
  • 3 tablespoons nutritional yeast
  • 2 teaspoons basil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon Himalayan salt
  • 1/4 teaspoon pepper

INSTRUCTIONS:

  1. Brown ground beef in a large skillet or Dutch oven.
  2. While the beef is cooking, chop the onion and zucchini.
  3. Drain off any excess grease from the beef.
  4. Add in all the rest of the ingredients and stir. Cover and cook over medium heat for 20 minutes, stirring occasionally.
  5. Enjoy!
